Sorry I didn't get this out yesterday . . . trying to accomplish too much in one day and time got the best of me.   It's been a hard week for me . . . Thursday would have been Rocky's birthday - we helped his boys make stepping stones which were placed at his grave.   I leave on Sunday with two of my granddaughters from SC for another week of mission with the community of McColl.  We have a small team of about 30 from central PA coming together to work on homes, hand out food, do an after-school program with children and youth.  I'm planning on it to be extremely hot, as always in August!  Nonetheless, it will be a good week of service to those in need.   Obviously, the kitchen will be closed, but will be back in business for the following week.   While Eric has been planting lettuce eveyr 2 weeks, this weather is keeping it from germinating and what has germinated has burned in the heat.  Hopefully we'll be able to have some soon.


If you are an Altoona customer, please be sure to check the delivery schedule printed each week.  There will be some adjustments during the rest of August as I juggle some commitments that can't be rearranged.  The remaining delivery day for August is August 22.


ALL ORDERS need to be received by late Sunday evening for delivery at our Tuesday market and for our Altoona customers on Wednesdays.  Orders may also be picked up at our farm on Wednesdays when convenient (will arrange via email) or on other arranged days.   NEXT WEDNESDAY DELIVERY IS AUGUST 22.

Where to find usTuesdays from 2-6 p.m. at the Boalsburg firehall.   Every other Wednesday we make deliveries for pre-orders in the parking lot between Uncle Joe's Woodshed and Everything Natural in Altoona from 2:00 - 2:30 p.mOrders can also be picked up here at our farm, preferably on Wednesdays.

This sure has been crazy weather - lots of hard wind, heavy rains, thunder and lightening here last evening.  We were without power for about 4 hours.  Have to admit that it wasn't all that bad - everything came to a screeching halt.  We don't realize just how much we depend on electric!

Had some trouble this week with Jeremiah, our draft horse - he knows that he is a powerful beast, so he decided to break through the gate in his pen and help himself to some grain in an old freezer where it's stored.  I thought I heard loud noises several times, but didn't think much of it.  Sure enough, he finished off the feed that was for the chickens, burros and Jeremiah - really glad that there wasn't much left.  He has gotten the freezer door open several times now in the last couple years - he's a pretty smart horse!

So sorry this is late . . . . one of those things where I remembered several times but was in the middle of something . . . hopefully you know what I mean! 

What a beautiful evening . . . I'm heading out to sit on our deck to unwind after a busy day.  Lots of work preparing for market today.  Speaking of market, the weather report is calling for 90s on Tuesday, so looks like it will be another hot, hot day under the canopy.  At least there's shade.

My granddaughter, Grace, has been setting up a lemonade stand on Tuesdays - she has worked really hard doing what it takes to make it and take it, I'm proud of her.  I have given general instructions and she has done the rest.  She will be at camp this week, so I will be bringing my version of lemonade . . . fruit fresca, a fresh fruit water made with watermelon, cantaloupe, peaches, lime  and orange juice - so very refreshing!  Check it out.

Where did all this hot weather come from??!!  I'm finding it hard to simply breathe let alone get the needed work done!  Some of you have been asking about our Harvest Shak - it has now been officially put to rest as the Harvest Shak, but has found new life as a clubhouse for the kids!  We had it moved on Thursday, which was pretty cool to watch.  Eric is working to put the windows, door and porch back on . . . the kids are waiting for their first sleepover.  They are already starting to make 'clubhouse rules'!  We put the Shak where a large tree was struck by lightning several weeks ago.  We had power run near the tree for a floodlight, so now there is electric in the clubhouse, making it an even cooler! 

This will be a week for Dema to celebrate the last fence board being painted!  He was a trooper for sure and got alot done even with the hot, hot weather - the fence was in the shade on these hot days and he didn't paint quite as much, but he's planning out how many more days it will take.  Then it will be time to shop for a new bike.  This has been a really good experience for him, giving him alot of confidence in himself, which he desperately needed.

Despite the hot weather, the gardens are doing beautifully, except for the lettuce that is rebelling a bit, so there won't be as strong a harvest this week for greens.

Is the week really gone already?   Dema has been doing a super job painting fence - he loves to be challenged to see how many boards he can paint in 30 minutes!  After he's done for the day, he head to the creek to cool off.  It will take him a while to complete the project because, let's just say . . . he's pretty slow! . . . but that's ok because this is about learning responsibility and he's doing a good job with that. 


Eric left early this a.m. to pick up chickens from the processor, so it's fresh chickens this week - let us know if you want any.  Cindy will be away this week leading a team of nearly 70 youth and adults on a mission in South Carolina.  That means the kitchen is closed for this week.  Altoona deliveries are scheduled for June 13, 27, July 11, 25.

Beef:    Taking orders for  July/August - Sold by the 1/8th, 1/4th, 1/2 or by the whole animal.  Cost is $3.75/lb hanging weight which includes vacuum packaging.  Also available is burger by the pound - cost is $5.25/lb., order 10 or more lbs. for $4.75/lb.

More spectacular weather these last few days - problem with that is I want to forget about all the work that needs to be done and plant myself on the deck, or go for a bike ride or hike.  It's fun to dream! 

It's hard to believe it's nearly the middle of June.  Since harvest day is a few days out, we are anticipating potatoes, beets and cucumbers for next week.  We aren't promising anything however!

We will be doing WEDNESDAY DELIVERIES THIS WEEK because I will be away the following week (20th).  If you are a Wednesday customer and are interested in getting potatoes, beets or cucumbers if they are ready, be sure to put them in your order.   We will be keeping the deliveries at two per month unless you request we go back to weekly deliveries.  So for now June/July deliveries will be:
June 13, 27, July 11, 25.

It's been a busy week here on the farm!  Fences are nearly fixed, crops are in the ground (early red potatoes, beets, zucchini, cucumbers, spaghetti squash, and French filet green beans) vegetable patches cultivated, onions weeded, our new berry patch is underway, and we have a huge extra event scheduled for tomorrow!  Once again we will be providing lunch and snacks for the native plant sale at Penn State's Shavers Creek Enviromental Center.  If you would like to check it out, come anytime between 10 and 2:00 tomorrow (Saturday), there will be plenty of folks selling flowers, shrubs, and trees native to PA...not to mention the great food that will be available!!!  (Soups, salads, sandwiches, and plenty of other goodies!)

Saturday the 12th, we will be processing our next round of chickens, so we are now accepting orders for whole chickens, 1/2 chickens, livers, and our (soon to be famous) pet food.  We will have them fresh at market the following Tuesday, but these tasty morsels don't seem to last long!


WEDNESDAY ALTOONA DELIVERIES THIS WEEK - The next May delivery date will be May 23.  We will decide if we need to return to weekly deliveries after this.

Hi Everyone -

Sorry for 2 emails in 1 week, but we forgot to mention that when we return we will be processing our last round of chickens for the year...they will not be available again until early March 2012!  Although this is a large round, we do not anticipate them lasting past Christmas, so we wanted to give you ample opportunity to place pre-orders.  Because they are vacuum sealed in freezer grade plastic, they will last for months in your freezer.  We will have split chickens available, but they must be preordered before December 15th.

Hi Everyone - 

It's been another busy week here at Eden View!  There were no hunters to guide this week, so we even closer to putting the fieds to bed for the winter, the fall crops are coming along...slowly but surely, and the kitchen is rolling right along!

Dema's teacher tells us that he has an amazing mind when it comes to math and he comes home each day excited about school.  The chickens we got him this spring are getting old enough where they should start to lay eggs, so we are hopeful that by mid-October he will have enough to sell...we'll see!

WEDNESDAY DELIVERY TIME CHANGE - A reminder that our Wednesday delivery time in Altoona is now 2:00 - 2:30 p.m., same day, same location.  This allows me to return home to get Dema off the bus.  We appreciate the flexibility of our Altoona customers and hope this isn't too much of an inconvenience.

Hi Everyone - 

Once again we are a little late, but I guess that could be a sign that things are a little too crazy around here!  The root cellar is filling up with beets, garlic, and onions--the storage potato harvest will begin this week, and the last field plantings for the year will happen this week--lettuce, mesclun, spinach, and arugula. We have also rented a deep freeze locker so we can safely and effectively store some chickens for the winter...the season is beginning to wind down.

Sunday we took a road trip to get Dema a pet, we have seen enough growth in personal responsibility that we figured this would be a good next step.  It is an 8 week old pygmy goat that he named Harry.  So far so good--the goat follows him everywhere!

Today is processing day--another round of fresh chickens!  Finally, we are starting to see some size in the chickens, this week look for a plump meaty 5 pound average!  These will be outstanding roasters, or for those of you with a rotisserie on your grill, spin them at 300 degrees for 1 1/2 hours and you will have a real treat!

Chickens:  FRESH CHICKENS THIS WEEK.  Price is for whole chickens, average weight between 4-5.5 lbs. is $3.25/lb.  Petite hens, about 2.5 lbs. are $10 each, and halves are $3.50/lb.   These birds are pastured and pure . . . as well as super tasty!  We have finished our test round for the addition of pet food!  This is 100% pure chicken, pet tested and mother approved!  It is also a pure and natural source of glucosamine and condroiten for your pets joint health.  It will be available next week in 1 pound containers for $3.50 per pound. 

Beef:   We sell the beef in 1/8th, 1/4th, 1/2 or by the whole animal.  The cost is $3.60/lb hanging weight and the price includes vacuum packaging.  Burger is available each week for $5.25/lb. - 10 or more lbs. for $4.75/lb.

From the field: limited quantities of hericot vert (green beans), candy onions, fresh garlic, new red potatoes, beets, spaghetti squash, tomatoes and basil.

From the kitchen:  

Meat piesbeef broccoli or chicken spinach.  Made with Eden View pastured meats and potatoes, tossed in a mushroom cheddar cream sauce. 

Broccoli Onion Quiche 

Salads: Pecan Apple Chicken Salad - made with our chickens; marinated mushroom and veggie salad -  a variety of veggies and portabella mushrooms tossed in an herbed viniagrette dressing,  spelt/kamut apple nut salad - made with sprouted spelt and kamut berries, apples, walnuts tossed in a fresh orange juice maple dressing

Stuffed Pitas - made with sprouted flours and stuffed with either tomato/feta/basil, leek mushroom, spinach ricotta or beef and sweet red peppers

Azuki ancho hummus - made with organic azuki beans, fresh garlic, olive oil, spices

Baked Goods and Breads - made with sprouted flours: shortbread cookies, oatmeal date nut bars, scones (dark chocolate nut or lemon poppyseed), garlic herb pizza crust, tomato mushroom foccacia, pita bread (pkg of 4).

Dark Chocolate Nut Torte - NO FLOUR - made with dark chocolate, nuts, free range eggs.  A delicate, delectable treat that taste like a rich brownie.

Nutty Berry Mix Granola
